Billy Chili by Danielle Verna
Ingredients:
2 lbs ground mountain goat (or other ground game meat of your choice)
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
3 cloves garlic
3 cups cooked beans (black, pinto, kidney, or combination; if using canned beans, rinse first)
1 can diced green chilis
2 15 oz cans stewed tomatoes
2 T tomato paste
1 c beef broth
Dash of Worcestershire sauce
Diced jalapenos as desired (optional)
2 T chili powder
2 T cumin
1 T cilantro
1 tsp salt
1 tsp black pepper
1 tsp oregano
1 tsp thyme
Red pepper as desired
Directions:
Brown ground meat with garlic. Add all ingredients to a Crock-Pot and cook on low for 8 hours. All seasonings are approximate – adjust as needed. For bean-less chili or to mix it up, replace beans with chopped potatoes and root vegetables (carrots, parsnips). Top with shredded cheddar cheese, sour cream, lime juice, avocado, or tortilla chips as desired. It’s usually better the next day!
